1/2 saindoux
1/2 lard demi-maigre
Oeufs
Crème fraîche
Sel, poivre
Cantal rapé
Cuire des pommes de terre à cru en petits dés avec moitié saindoux, moitié lard demi-maigre également en dés. Battre les oeufs avec la crème, saler et poivrer. Verser la préparation sur les pommes de terre rôties et terminer comme une omelette. On peut y ajouter du cantal râpé.
